What to Make Next if You Love Viking Toast
Whether you’ve had a chance to try it or not, you may have spotted that our Viking Toast recipe went down a storm on TikTok and Instagram recently! If the golden, tangy topping of cheesy, caramelised onions hasn’t quite swayed you yet, knowing it’s ready in under 10 minutes might just tip you towards getting your grill on. A satisfying lunch with a crunch, it’s as light as 294 calories per serving too!
You can find the full recipe in our latest cookbook, Pinch of Nom: Enjoy (on pages 34-35). Not got your copy yet? Grab yours here!
To keep the fun going long after your final bite, we’ve rounded up some toasted treats and cheese-and-onion nibbles that’ll help you decide what to make next!
Toast, toast and more toast!
At Pinch of Nom, we’re experts at giving the humble cheese toastie a slimming-friendly, flavour-filled makeover. Take our Cheesy Chilli Toastie as an oh-so-cheesy example. Perfect when you fancy lunch with a kick of spice, we’ve partnered fresh chillies and chilli powder with a gooey layer of Gouda cheese.
Don’t worry if you can’t find Gouda cheese; reduced-fat cheddar or other varieties will work as well (just be sure to adjust the calories accordingly, if you’re counting).
You’ll want to grate your cheese so that it’ll combine nicely with your spring onions, herbs and spices.
An oldie but a goldie, our Cheesy Leeks on Toast never fails to hit the spot. While it might feel like cheese on toast should be off the menu when you’re eating slimming-friendly food, that’s far from the case with a few nifty lower-calorie swaps in the mix.
We’ve paired Cheddar with a stronger-tasting hard cheese so that you can get the punchy flavours you’re after, without piling on the calories. Why not give it a whirl for breakfast tomorrow?
This recipe is from our second cookbook, Pinch of Nom: Everyday Light. You can find the full recipe on pages 26-27.
A taste bud tingling combination of crunchy veggies, reduced-fat mature Cheddar cheese and tuna, you’ll never regret having our Tuna Melt Toasts on your lunch rotation. We’ve included red onion, red peppers, spring onions and cherry tomatoes in our toastie topping, but there’s nothing to stop you inviting other leftover veggies to the party.
Just like our Viking Toast, you can find the full recipe in your copy of Enjoy (this one’s on pages 212-213).
A toasted treat you’ll want to come back to time and again, it’s tasty enough as a standalone snack or you can pair it with a fresh, crispy salad for a filling midday meal.
Toasted treats don’t always have to be savoury. The proof is in the pudding with simple, sweet delights like our Chocolate French Toast. One of the quickest recipes you can make from our toasted roundup, you only need a very short list of basic store cupboard staples to put it together.
To make our chocolate hazelnut spread pop, we’ve infused each slice of eggy bread with cinnamon, vanilla extract, ground nutmeg and a hint of sweetener.
Trust us, you do not want to miss this one if you’ve got a sweet tooth…
Who says you need to go out for brunch? With our recipe, you can serve Creamy Strawberry French Toast in the comfort of your kitchen. Filled with sweetened cream cheese and fresh, sliced strawberries, they were made to be served with a sprinkling of icing sugar and maple syrup on top.
Your egg-soaked bread slices will only need around 2-3 minutes in a hot frying pan on either side, before they’re golden and utterly delicious (the full recipe is on pages 24-25 of Enjoy!).
Glorious cheese and onion dishes
If you agree that cheese and onion is the queen of classic flavour combinations, you’ll be on board for Caramelised Onion Cheese Toasties. We’ve paired strong, mature reduced-fat Cheddar flavours with spinach, mushrooms and onion to make sure they’ll fill you up, for only 237 calories per melt-in-the-middle sarnie.
When you’re on the lookout for a cheese-and-onion nibble that’ll taste delicious hot or cold, our Caramelised Onion Quiche ticks all of the boxes. Ready in under an hour with a handful of simple ingredients, we’ve cut the calories straight away by making our quiche creation crustless.
It’s so rich with bold cheese and caramelised onion flavours, you won’t spare a thought for the lack of shortcrust pastry. Pop it in your tupperware for a picnic, save it for lunch or enjoy it with Homemade Oven Chips for a hearty dinnertime treat.
Speaking of hearty dinners, if you’ve not ended the day with a slice of our Cheese, Onion and Potato Pie yet, we’d say tonight’s the night. The ideal comfort food dish for chillier winter evenings, we’ve lowered the calories by saying goodbye to full-fat pastry in favour of lighter, flakier filo.
With mashed potatoes, cheese, sautéed onions, mustard and garlic in our filling, there’s no shortage of good stuff to get excited about. Sprinkle over the cheesy topping and bake to golden brown perfection!
If you’re in the mood for a quick cheesy, oniony bite, but you don’t fancy a toastie, our Cheese and Onion Pasties will fulfil your needs. By using low-calorie tortilla wraps for our faux ‘pastry’, we’ve made them more slimming friendly without spoiling the fun.
Inspired by bakery-bought pasties, we’ve packed them with enough potato, low-fat cheese and onion to fill you up for the rest of the day.
While they’re quick to make from fresh, there’s nothing to stop you preparing a pasty or two in advance. These batch-cook dreams will keep in the fridge or freezer until you’re ready for them!
When you’re low on ingredients and you’re not sure what to make, our White Onion Soup is a simple, satisfying solution. We’ve used white onions because they have a sharper flavour that’s ideal for blitzing into a soup, but you can use brown onions instead if you’d prefer.
By combining onions with stock and half-fat crème fraiche, every spoonful is creamy and velvety for only 222 calories per serving.
It’s so good, you’ll want to use a wholemeal crusty bread roll to mop up any leftovers!
