Using a strong-tasting hard cheese alongside a little Cheddar, you can pack in the cheese flavour without needing to use mountains of the stuff. It will satisfy even the greatest cheese-lover.

Xanthan gum acts as an ingenious binding agent. It is gluten-free, so you'll find it in the 'free-from' supermarket aisles.

Really tasty, breakfast, brunch, lunch, love it!
As I didn't have bread, I raided the freezer and found crumpets. Still worked really well, very tasty and filling! Great with a jacket potato too or as a topping on mash or other vegetables.
