Chimichurri Baked Cod
If chimichurri is involved, we're there! A really simple, tangy sauce originating from Argentina, it makes our Baked Cod into a marvellous midweek meal. Our lower-calorie version swaps oil for a combination of fresh herbs, punchy spices and vinegar, and you can hardly taste the difference! We've baked the cod inside foil parcels to guarantee they'll leave the oven flaky and flavoursome, without drying out.
