Baked Pineapple Cheesecake
You can’t go wrong with a cheesecake, and with a tropical twist, this is a total showstopper. Cheesecakes can be a little heavy, but we’ve lightened this up with a few low-calorie swaps. The crumbly gingernut biscuit base adds the perfect crunch; and you’ll love the pineapple rings caramelised in zesty syrup for the top. Well worth the effort!
