If you ask us, on a cold, autumnal evening, there are few better things than walking through the door to the smell of a slow-cooked stew, ready and waiting for dinner. If only other parts of our lives could take care of themselves the same way! This is super easy to prep and can be cooked in the oven or slow cooker, making it the ideal midweek family meal.

I used cut up braising steak and swapped the thyme for oregano. I can imagine it would even work well with a pork shoulder (unfortunately the calories won’t stay the same!), it’s a very versatile and forgiving recipe.
We added butternut squash
We used two bags of pre chopped sweet potato and butternut squash mix to make the prep on this recipe super easy.
I would also make a vegetarian version of this with beans, vegetable stock and vegetables. It would be a delicious and easy no meat meal!
