Bombay-Style Potato and Chicken Tray Bake
You can’t go wrong with a traybake when you fancy a fuss-free dinner, and this one always delivers on flavour. We’ve nestled some succulent chicken thighs onto an oven tray, along with fragrant, spiced potatoes, chunky veggies and chickpeas. Our homemade, Indian-inspired yoghurt marinade is what brings this whole recipe to life, adding aromatic spices and a hint of fresh lemon.

If you are scaling this up to serve more than two, you will probably need to cook it a little longer.
If you like it fiery, add some chilli powder to the marinade. Alternatively, you can add a chopped chilli to the tray before roasting.
