Topped with sweet, soft, caramelized onions and plenty of cheese, these easy puff pastry tarts truly are a thing of beauty. They only take 10 minutes to prepare, and then you can let your oven do the rest of the work. When they’re ready, you’ll be biting into layers of flaky puff pastry, melt-in-the-mouth onions, sweet tomato and creamy, melted cheese. We can’t think of anything we’d rather make for lunch today!

We used brown onions, but you could try using red onions instead. Get creative and add your own combinations of ingredients on these crisp tarts.

You will have a thick layer of onions on the tarts, this will reduce down after baking in the oven.
