This curry is brimming with so much flavour, you’ll never miss the meat. To keep things vegan friendly and lower in calories, we’ve swapped out chicken for crispy tofu, coated in light panko breadcrumbs. Rich with veggies, spices and just the right level of sweetness, it’s tough to believe these Japanese-inspired flavours are slimming friendly. You’re guaranteed to want the moreish Katsu- style crunch again, so do yourself a favour and save extra sauce for another day!
