We aren’t too sure where we got the idea for this dish, but how could we resist the sound of a cheesy meatball and potato bake? This is super family-friendly because, as well as being delicious, we’ve packed the creamy sauce with loads of hidden veg. Oooh, just look at that golden cheesy topping! Serve with a mixed salad.

I added a vegetable stock cube to sauce before blitzing to add some more flavour
Looks and smells amazing, can’t wait to get stuck in,
Hint would be to make sure you use good sized potatoes else you don’t see them between the meatballs as they covered by the sauce. I used medium sized as that’s all I had. Also sprinkled some mixed herbs on the top for extra taste.
