Inspired by the popular spicy stew from Southern USA, our Chicken Gumbo is a healthy, hearty meal the whole family will love. To keep it slimming friendly, we’ve used a tomato-based sauce, enriched with the gumbo ‘holy trinity’ of green peppers, onion and celery. This perfect weeknight dinner, served with a side of fluffy boiled rice, can be on the table in under an hour.

Don't be afraid to mix it up!
My favourite thing about PON recipes are how versatile they are. I never sweat if I don't have 1 or 2 ingredients. I just go with the flow and my instincts, either substituting things or just missing them out.
I would reduced the sauce more next time as it was a little runny but still really tasty. Very easy to make, could maybe do it as a one pot recipe and add rice. We didn't add celery or courgette as we don't like them but it was still lovely.
This recipe is really versatile I think. I couldn't get some of the vegetables but substituted for what I could get/had in stock! It was perfect. Full of flavour and lots of extra vegetables added
