You may find you need to blitz the ingredients in two batches depending on the size of your blender or food processor. We found a handheld stick blender was not suitable for blitzing the ingredients. If you like to prepare ahead, make sure your dishes are suitable to place in the freezer and pipe or spoon into them, then place in the freezer and serve later. Take out of the freezer 5 minutes before serving to soften a little.

Swap this

You can swap the fresh pineapple for tinned pineapple chunks in natural juice (well drained) or frozen pineapple chunks.
