Lean lamb can be a little flavourless and dry if you don't pack it full of herbs and spices to enhance the taste. This herby crumb is a great way of adding fresh flavours to the meat and texture along with the breadcrumbs. Garlic, rosemary and lamb are a match made in foodie heaven. This would be a perfect alternative to a roasting joint and would work well with the usual roast-dinner accompaniments, or even rice and vegetables.
