Rather than calorific pastry, this light quiche has a crust made from potatoes! It’s amazing what the humble spud can do: here it adds the perfect crunch to the filling. Try to slice your potatoes as thinly as possible (using a mandoline, if you have one) so they’ll get nice and crispy in the oven.

    Hi, yes you can reheat the Herby Quiche with a Potato Crust after freezing. Defrost overnight in the fridge, then you can reheat in the microwave or a moderate oven until piping hot throughout.
