Lemon Curd Swiss Roll
Our slimming-friendly version of a Swiss roll is guaranteed to put a smile on anyone’s face. Light airy sponge and zingy sweet lemon curd were made to go together, and you won’t regret giving this recipe a try. Rolled up and cut into swirled slices, our citrusy treat is finished with a simple dusting of icing sugar (you can add a sprig of mint and a few lemon slices if you’re feeling fancy!). It is important to roll the sponge while it's still warm otherwise it won't roll up properly.
Make sure to use an electric whisk to whisk the sponge mixture to a thick, pale and creamy consistency. It will be very difficult to do this by hand.
