Lentil and Root Vegetable Bake
Lentils are perfect for a meat-free alternative in bakes and pies, as they are high in protein and fibre so help keep you feeling full until your next meal. This recipe uses a splodge of Marmite to add depth to the flavour of the stock. Using cooking spray on the potatoes and swede before they go into the oven is a great way of making sure they crisp up nicely, without the need for lots of oil.
