We can never say no to French toast for breakfast! For this extra-sweet version, we’ve taken inspiration from the classic American sandwich combination – peanut butter and jelly! 

We might call it jam over here in the UK, but there’s something about the pairing of sweet fruit and salty peanut butter that we can all agree on. Because traditional jam is full of sugar, and peanut butter is high in fat, you’re not wrong in thinking this recipe sounds like it could never be slimming friendly!

In true Pinch of Nom style, we’ve made a couple of easy swaps that mean you can dish up a serving of our Peanut Butter and Jelly French Toast for just 374 calories. You’ll barely even be able to tell we’ve used reduced-sugar jam (and you can use strawberry, raspberry or any other flavour you prefer!). For the peanut butter layer, we’ve mixed some peanut butter powder into a creamy paste that gives you all the flavour, for a fraction of the calories. 

A dusting of icing sugar finishes things off nicely, and you can’t go wrong with adding a few sliced strawberries on the side!

Add the eggs to a bowl and dip the sandwiches on both sides, allowing all the egg to be soaked up into the bread.

Spray a large frying pan with low-calorie cooking spray and place over a medium heat. When the frying pan is hot, transfer the sandwiches to the frying pan. You may need to cook each sandwich separately depending on the size of your pan. Fry for 2–3 minutes on each side, until golden brown and a little crisp.

Remove from the frying pan and dust with a little icing sugar. Cut each sandwich in half diagonally and serve!

  • 4 slices medium-thick white bread, approx. 36g each
  • 2 medium eggs, beaten
  • 2 tbsp peanut butter powder
  • tbsp water
  • 2 tbsp reduced-sugar jam (we used strawberry)
  • 4 medium strawberries, thinly sliced
  • 1 tsp icing sugar
  • low-calorie cooking spray
