This baked sweet and sour recipe really puts your store cupboard ingredients to good use. With a bit of spice, a bit of sweetness and a bit of tang, there’s something for everyone here. The key is in marinating the pork: the longer, the better.

If you are using bamboo skewers, be sure to soak them in water before cooking to stop them from burning.

A tomato each end really holds everything in place!
Go wild with colours and book end each skewer with cherry tomatoes which hold everything else in place!
What an absolute treat!
Easy peasy done in the air fryer. Served with a tzatziki made out of 0% Greek yoghurt

Worth it to baste with leftover marinade
