Cassoulet is an old dish from the South of France. Made with pork and beans in a hearty sauce, it was a thrifty dish, designed to make meat go further, while still being filling. We've kept all the traditional flavours and ingredients but cut out all the fat and calories to make this beautifully rich cassoulet.

Slow cooker it

Brown off the meat first, soften the veggies, cooked mine for about 5.5hrs (meat was perfect). Add the beans about half an hour before eating. Could probably have got away with less stock

Made this with the Colcannon recipe, both complimented each other very well, was a very tasty and filling meal.

Easy recipe to tweak with extra vegetables

Used pork mince & added peppers sweetcorn & a dash of Fajita sauce, the whole family loved it
