Inspired by the popular Korean dish, this Quick Kimchi Style Slaw is our speedy take on crunchy, fermented veggies. Ready in just 15 minutes, this can be enjoyed straight away or stored for up to 2 weeks to help the flavours develop. 

In Korean cooking, Kimchi is served on the side of almost every meal. Packed with veggie goodness, this tasty slaw is so versatile – add it to any dish when you fancy adding in some extra vegetables.

This will taste better the longer you leave it, so it’s ideal to make in batches to enjoy throughout the week. Each serving is just 24 calories, making this recipe the perfect slimming friendly alternative to creamy coleslaws and other indulgent side dishes.

Ingredients

  • 200 g spring cabbage, thinly sliced
  • 2 medium carrots, peeled and coarsely grated
  • 5 radishes, coarsely grated
  • 100 g cucumber, finely diced
  • 2 cloves of garlic, peeled and crushed
  • 5 cm piece of root ginger, grated
  • 1 tbsp rice vinegar
  • 1 tbsp granulated sweetener
  • 2 tsp Sriracha sauce
  • 2 tsp soy sauce
  • 2 tsp fish sauce
  • 1 tsp lemon juice

Could I use garlic granules instead of fresh garlic

    Hey Sam, yes in this recipe you could swap the fresh garlic for garlic granules. We have a fresh vs dried herb guide HERE which uses a ratio of 1 fresh clove to 1/2 tsp dried. Hope that helps!

    Hey Kirstie, spring cabbage is a type of white cabbage and has a slightly sweet flavour. It can sometimes be called pointed spring cabbage or sweetheart cabbage hope that helps!

    Hey Mandy, you can eat raw courgette but it may be a little bitter and the skins a little tough. You could swap the cucumber for extra of the other vegetables or could add a diced pepper instead. Hope that helps!
