You can swap the leeks for one large, finely chopped onion.

A really fun cooking time and incredibly easy!
Any kitchen food processor with a blade will do the blitzing - you're bound to have something that'll do it!
Hint & Tip
I added some garlic granules to it as I thought it needed a bit more oomf. Might add a bit more Worcestershire sauce next time too.
