This recipe is derived from one of our most popular recipes, One Pot Mediterranean-style Chicken and Orzo Bake. We’ve made it sweet and spicy (but not too spicy) to give it a Moroccan-style twist with the ras el hanout, tomatoes and a few sweet sultanas. Cooked all in one pot, because who wants to wash lots of pans, and only 523 calories, this is great for calorie counters or those following popular weight-loss plans.

Swap This

You could swap the sultanas for diced dried apricots.

Made this dish vegetarian using quorn fillets, it was delicious and definitely a regular from now on.
Family pleaser, we loved this recipie.
I used chicken breast as its what I had in. It was so easy to make and delicious.
Really tasty dish. Lots of taste bud tingling flavours.
We would cook the Butternut squash next time separately for a few mins before the other veg as it was still a little bit hard, Even though we cut it small.
Speed prep!
It works well with chunky chicken breasts. To speed up prep time use frozen vegetables, especially as you only need 100g of butternut squash. The tip in the book says you can swap Raisins for chopped apricot, why not add both!!
Lovely all in one pot recipe
I couldn't find Ras el Hangout anywhere so used a Moroccan seasoning, not sure how similar it is but the recipe was delicious
