Our Roasted Garlic Mashed Potato recipe is so rich, creamy and low in calories, there’s really no reason to say no! As if having garlicky flavours in each and every spoonful wasn’t enough, the melty golden cheese topping really seals the deal. This one’s ideal to rustle up if you want to add an extra-special side dish to a midweek meal.

We used one whole head of garlic, which contains around 8 individual cloves. This may sound like a lot, but the flavour of garlic mellows when it’s roasted. You may even want to use two whole heads if you’re a big fan of strong garlic flavours! Why not put your potato peelings in the oven with the garlic and make a batch of Potato Peel Crisps (see page 190)
