We've given a twist to this classic Italian-style dish, drawing inspiration from the flavours of Mexico. The cannelloni is stuffed with a spiced beef chilli mixture, and the tomato sauce has the flavours of a salsa, with red chilli and fresh coriander. It’s topped with a layer of crispy, golden cheese and is delicious with a mixed salad and a little sliced avocado.

Swap This

You could swap the beef for minced turkey or 5%-fat minced lamb or pork.

This dish is fairly mild. If you prefer things hot, you could add another teaspoon of chilli powder to the beef.
