St Clement’s Pudding with Citrus Sauce
We feel nostalgic just looking at this St Clement’s Pudding! Made with oranges and lemons, this homely, retro pud has the perfect balance of sweet and sharp flavours. The silky citrus sauce is a heavenly match with the light sponge –we like to drizzle ours straight on top, or you can serve it in a jug and let everyone pour for themselves!

Use white granulated sweetener that is the same weight and texture as sugar. We used Light Syrup made by Sweet Freedom. It’s made from fruit extracts and contains 31% fewer calories than sugar, so it’s a great way to reduce calories in this pudding. We cooked this recipe in an 800-watt microwave oven. Timings may vary a little depending on the power of your microwave oven and are a guide only.
