Save a few pennies and make this restaurant favourite in the comfort of your own kitchen. Donburi is a traditional Japanese dish where meat or fish is served over a bed of rice. In our version, we've swapped sushi rice for basmati to make it more store-cupboard friendly, and it's just as tasty! Once your chicken has had time to marinate, this recipe comes together really quickly. Fluffy rice, tender chicken thighs and crunchy veggies. . . what more could you ask for?

You can slice the carrots into matchsticks, grate them or use a julienne peeler.

Substitutes
We substituted the pea shoots for Lamb's Lettuce, baby spinach would also work. And marinate the chicken for as long as you can - we did it for 24 hours!
