Looking for a speedy brunch with bold flavours? This Viking Toast is the one! Inspired by the melty cheese and onion from our Viking Pork recipe, we thought we’d try out the same golden, tangy topping on toast (and it works a treat!). Forget about plain old cheese on toast, mornings don’t come much tastier than this.

Hints & Tips

Below we added some of our communities most common hints and tips. We hope you find them useful.

To have your lunch with a little more heat, add a small pinch of chilli powder, chilli flakes or a few drops of hot pepper sauce to your. Cheese and onion mix.

On a crumpet!
Added the same recipe but on a toaster crumpet. Toasted the crumpet slightly first! Few extra calories for a Saturday morning!
Mix it up!
Feel free to mix it up by using different styles of cheese but make sure to count the extra calories.
I didnt have grated cheese in so I had to used sliced cheese. It may not look as nice but tasted lovely!
I prefer onions cut as small as possible
Viking Toast
Make sure you cook the onion well to eliminate the water content & for mine a double batch I used 1 XL free-range egg & it came out well. I used Pumpkin seeded wholemeal bread too
Red or brown onion both amazing!
I always use the whole egg but no milk... yummy!
Unbelievably tasty and easy to make, I added leek & mushrooms to the mix
Was absolutely amazing and delicious so easy to cook
Had it with low calorie chips for my tea
This recipe is really easy & quick to make
We used leeks instead of onion and it was still just as delicious, we also toasted one side of the bread. It also makes a perfect evening meal as it so quick & easy to make & after a hard day at work we like recipes that don't need lots of prep
Try mixing this up with different vegetables and meats like mushrooms, peppers, ham or bacon for a different meal everytime but with the same great taste 😋
I used red onions as they seem to caramelise better and I've found you can make the mix the night before and keep it in the fridge saving those valuable few minutes in the morning
Best toast topper ever!
Will absolutely be making this one again, breakfast, lunch, snack - anytime! I used an egg separator for ease and then made mini meringues with the egg whites, so no waste!
Used red onion. Sweeter, will try it with ordinary onion and decide which is better.

I swapped the wholemeal bread for rye.

It's worth taking the time to cook the onions properly as they add a lovely sweetness to the end result
Quick and easy and so delicious
I used a combination of Red Leicester & Mature Cheddar.
Wow, this is some special treat, posh cheese on toast,
What's not to like about this, you could make this extra special, use a blue cheese and serve as a starter for a dinner party, or Christmas sneak some cranberry under the topping, or if like me marmite.
