What to Make First from Pinch of Nom: Enjoy
We’re still buzzing that our latest cookbook, Pinch of Nom: Enjoy is finally out in the world! It blows our minds that so many of you pre-ordered the book, or went out and bought it right away, and it’s been even more overwhelming to see all the comments and photos you’ve shared on the PON Gallery and in our Facebook group already.
It was so important to us that this book was jam-packed with a whole host of unmissable recipes – so you’ll find breakfasts, stews and soups, bakes and one-pots, snacks and sides, sweet treats and Fakeaways inside.
We wouldn’t blame you for not being sure where to start, but we’re always here to help! Inspired by what the wonderful Pinch of Nom community has been cooking up so far, we’ve put together a list of the recipes you should make first from Enjoy.

I want to Enjoy a breakfast recipe first
With a copy of Enjoy in hand, it’s easy to start the day with a breakfast that’ll set you up until lunchtime and beyond. You’ll be jumping out of bed to try our oh-so-fluffy Fry-up Frittata (on page 32-33).
It borrows all the best bits from a cracking fry-up, and bakes them together into a super-filling morning treat. We’re talking smoked bacon, mushrooms, cherry tomatoes, beans and eggs, for only 323 calories per slice!
We’ve worked a sprinkling of Parmesan into our pan to make sure it’s too cheesy to say no to.
Speaking of cheese, if you love a golden-topped breakfast, you need to try our Viking Toast (on page 34-35). Using the magic of a cheesy, oniony flavour combo, it’s no wonder that our moreish topping is fast becoming our community members’ new favourite way to enjoy cheese on toast.
Anne’s already enjoyed hers with a cup of tea – we wish we could try a bite!
If you prefer to kick off the day with something sweet, our Creamy Strawberry French Toast (on page 24-25) is the one to try. We fill the slices with sweetened cream cheese and sliced strawberries, then pan-fry them in a cinnamon-infused egg mixture.
Breakfast doesn’t come much dreamier than this, especially for 196 calories per sandwich!
I want to Enjoy a midweek dinner recipe first
Our fifth cookbook has plenty of ideas you’ll want to spruce up your midweek menu with. Take our Meatball Lasagne (on page 156-157) as a mouthwatering example; two Italian-inspired comfort dishes in one, we’ve layered herby, homemade meatballs together with pasta sheets in a rich, veggie-loaded sauce. It’s guaranteed to warm everyone right up!
We know our community can’t get enough of creamy chicken dinners, so it’s no surprise to see that some of our amazing Facebook group members have made a start with our Creamy Cajun Style Chicken (on page 168-169).
Silky and luxurious for only 224 calories per serving, this versatile one-pot wonder can be served as spicy as you’d like – simply throw in some extra chillies, if you’re feeling daring.

Inspired by our hugely popular One Pot Mediterranean Chicken and Orzo Bake, the Ras el Hanout Chicken and Orzo Bake (on page 126-127) recipe turns things up a notch with a Moroccan-style twist.
As well as ras el hanout, tomatoes and sweet sultanas, we’ve relied on our store cupboard for the perfect blend of herbs and spices (and added plenty of nutritious veggies!).
One of our Weekly Indulgence recipes at 523 calories, we’re not surprised this enticing dish caught Joanna’s eye – how incredible does their portion look?
I want to Enjoy a sweet or savoury bake first
There are plenty of opportunities to crack out your apron and wooden spoon with Enjoy. Chocolate brownies with a creamy banana-infused twist, our Banana Bread Brownies (on page 230-231) will satisfy your sweet tooth for only 128 calories per teatime treat.
You won’t believe how short the ingredients list is to make these gooey-in-the-middle squares!
Alongside sweet cheesecakes, frozen desserts and warming puds, you’ll find our savoury Cheese and Marmite Swirls in your copy of Enjoy (on page 210-211).
Baked to perfection in under 20 minutes with only 4 ingredients, it’s impossible to hate these flaky, Marmite-filled pastries.
Joanne’s have turned out beautifully! We’d love to try one with a cuppa.
Hot or cold, our Creamy Garlic Mushroom Quiche (on page 154-155) is always a winner. A veg-filled, cheesy treat, you can keep it nice and light with a side salad at lunch or bulk it out for dinner with some fluffy baked potatoes.
I want to Enjoy a Fakeaway first
If you’ll be flipping straight through to the Fakeaway section in Enjoy, we think our Cheesy Nacho Burger (on page 60-61) is an incredible place to start. Your new go-to main dish for Mexican-inspired evening meals, it’s piled high with peppers, cheesy tortilla chips, guacamole and spicy mayo. We know what we’ll be making tonight!
When you’re not in the mood for burger night, our fragrant Garlic and Ginger Curry (on page 82-83) is love at first spoonful. Full of flavour for barely any effort, we’ve cooled down the medium-level spices with mango chutney and a dollop of fat-free Greek yoghurt.
Mrs Lapet has already rustled up a portion and shared it with us in our Gallery (thank you!) – we’d go for basmati rice too, but there’s nothing to stop you getting creative with alternative sides.
We’ve always said that ‘if it swims, it slims’ and that’s no different with our slimming-friendly Tikka Masala Salmon (on page 49-51) dish. To give our flaky fish pieces their flavour, we coat them in a homemade marinade and let the masala-style spices mingle before cooking.
The best part about this dish is the veggie-loaded sauce; we’ve used peppers and courgettes, but you can bulk yours out with any stray veggies you’d like. The final result will be just as delicious!
Enjoying a takeaway style night-in is even better with side plates. Our Vegetable Spring Rolls with Sweet Chilli Dipping Sauce (on page 196-199) are the perfect accompaniment to your Friday night feast, and they’re only 114 calories per serving – dip included!
Like 29 of the recipes in Enjoy, our spring rolls offer you a choice of cooking method. Whether we make them in our oven or air fryer, we can only hope they look half as good as Laura’s do…
