This Prawn Cocktail is an “Oldie but a goodie” Slimming World, Weight Watchers and Calorie Counting friendly version of the old favourite.

This recipe will easily feed 2 people as a starter, or you could just have the whole thing as a light lunch or add some extra salad for a speedy main meal.
Being a child of the 70s and 80s prawn cocktail was a regular starter on special occasions like Christmas, Easter and birthdays.

The secret’s in the sauce
The classic prawn cocktail or Marie Rose sauce is made up of mayonnaise, tomato and lemon juice. Normally the tomato part would be ketchup, which just adds to the Syns, Points and Calories.
This seemed like a perfect recipe to use some of the Arla Cherry Tomato & Basil flavoured Quark, so we gave it a go. I think it turned out pretty well!
Another key ingredient for the sauce is acidity, so a bit of white wine vinegar and a squeeze of lemon juice does the trick. We’ve also added some finely chopped pickled gherkin to give the sauce a bit of texture and a bit more acidity.
Finally, we need a tiny sprinkling of colour. For this you can use either paprika, or cayenne pepper, which gives the same effect but with a bit more of a kick.
How many Syns are in this Prawn Cocktail?
Our tasty version of the classic Prawn Cocktail recipe is Syn free…
There is 1 Syn per 250g of Arla Cherry Tomato & Basil flavoured Quark – we’re only using 3 tablespoons in this recipe which works out at around one fifth of a Syn for the whole recipe and therefore the Syns are negligible. You could choose to Syn this at 0.5 Syns per portion if you wish.

How do I make this Prawn Cocktail?
Mix all the ingredients (except the prawns, lettuce, lemon and parsley) together in a bowl. Squeeze in the juice from one of the lemon wedges. Check the seasoning and add a little more black pepper if needed
Arrange the salad leaves on a plate or in a bowl
Stir the prawns into the sauce, then arrange them neatly on each leaf. Spoon over the remaining sauce, then garnish with the cucumber, tomato and lemon wedges and serve
