An oldie but goodie! This Syn Free Prawn Cocktail is a Slimming World friendly version of the old favourite.
This recipe will easily feed 2 people as a starter, or you could just have the whole thing as a light lunch or add some extra salad for a speedy main meal.
Being a child of the 70s and 80s prawn cocktail was a regular starter on special occasions like Christmas, Easter and birthdays.
The secret’s in the sauce
The classic prawn cocktail or Marie Rose sauce is made up of mayonnaise, tomato and lemon juice. Normally the tomato part would be ketchup, which just adds to the syns.
This seemed like a perfect recipe to use some of the Arla Cherry Tomato & Basil flavoured Quark, so we gave it a go. I think it turned out pretty well!
Another key ingredient for the sauce is acidity, so a bit of white wine vinegar and a squeeze of lemon juice does the trick. We’ve also added some finely chopped pickled gherkin to give the sauce a bit of texture and a bit more acidity.
Finally, we need a tiny sprinkling of colour. For this you can use either paprika, or cayenne pepper, which gives the same effect but with a bit more of a kick.
