This Summer Vegetable Quiche is everything you want from a warm weather dish… light, colourful, and packed with fresh flavour, without anything faffing around. The whole thing comes together in just 30 minutes and serves six in total!
We’ve gone for earthy courgette, sweet red pepper, spring onions, and a sprinkle of fresh parsley, then topped everything with juicy tomatoes that bake into the most beautiful finish. As with a lot of our recipes, you’re welcome to mix up the veg to suit your personal preference — just be sure to factor in any calorie differences if you are counting.
We love this recipe because it’s just as happy on a buffet table as it is alongside the barbecue, or sliced up for an easy, light lunch straight from the fridge.

Pour in the egg mixture.

Place the sliced tomato on top, then season with a little salt and black pepper.

Cook for 20-25 minutes, or until the quiche is set and starting to colour.

Instructions
- Preheat the oven to 190°C.

I am finding my local supermarkets no longer stock quark or fromage frais. What can I use as substitute?

Hi Margaret, sorry to hear you’re having difficulty finding quark or fromage frais. You could use cottage cheese instead, just blend it until it’s smooth first. Other alternatives are ricotta or Greek yoghurt. Do hope this helps!

It may have been that your veg had more water in than normal – try giving them a squeeze in a tea towel before putting them in the quiche ????
