This is our version of the ever-popular Teesside takeaway dish. Traditionally made from breaded chicken that's deep-fried and smothered in a calorie-laden béchamel sauce, our lighter version can be crisped up in the oven or air fryer. The slimming-friendly sauce is super quick to make in the microwave (yes, really!) using a combo of spreadable cheese and Cheddar to make it rich and creamy.

Prepare the chicken in advance
It's always a bit fiddly dunking chicken in cornflour, egg, then breadcrumbs, so try to do this either the night or morning before and refrigerate, saves so much work when you are ready to start cooking.
