This Fajita Bombs recipe is perfect if you’re following a calorie controlled diet, and it fits well with any one of the major diet plans such as Weight Watchers.
As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Obviously, if your goal is to lose weight then you might want to adjust these slightly! You can read more about these recommendations on the NHS website.
Step 1
Preheat the oven to 180ºC and spray a frying pan with low calorie cooking spray and set on a medium heat.
Step 2
Add the chicken to the pan and fry for 3 minutes, then add the onion and pepper and continue to cook for 3 more minutes.
Step 3
Sprinkle in the coriander, cumin, paprika, chilli powder and garlic granules and give the pan a stir to coat the chicken in the spices. Add in the tomato puree and chopped tomatoes and allow to bubble for 4 minutes.
Step 4
Microwave the tortilla wraps for 30 seconds. This is to make them easier to fold.
Step 5
Lay a tortilla wrap out and sprinkle with 1 tbsp of Cheddar cheese. Spoon some of the chicken mixture on top of the cheese. Fold the bottom of the tortilla over the chicken, folding it away from yourself, then rotate and repeat the fold on the next edge. Continue until the chicken is contained within the tortilla.
Step 6
Place the fajita bomb in an oven dish with the seam facing down. Repeat with the other tortillas.
Step 7
Sprinkle the remaining cheese on the top and pop in the oven for 15 minutes until the cheese is melted and the tortilla wraps are just starting to go crispy.
Step 8
In a small bowl combine the chopped tomatoes, red onion, lime juice and garlic granules.
Step 9
Serve the tortilla bombs with a spoonful of the salsa and sour cream.
What could I serve with these Fajita Bombs?
Fajita Bombs are delicious served with a simple side salad, or you can pair with some of our other Mexican inspired dishes for a fabulous feast. We like them served simply with some oven chips and leafy greens!
How do you know when Fajita Bombs are cooked?
You should cook these Fajita Bombs until the cheese is melted and the tortilla has started to go crispy. The chicken inside should be cooked all the way through, with no pinkness in the middle.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
How long can you keep Fajita Bombs in the fridge?
Once you’ve served this dish, ideally you should eat it within 4 hours.
If you have any leftovers, make sure that you allow them to cool before popping them in a container with a lid and refrigerating. Leftover Fajita Bombs can be kept in the fridge for up to 2 days.
Can I freeze Fajita Bombs?
You can absolutely freeze this recipe! If you do, just remember to do the following:
- Allow it to cool and then freeze as soon as it’s cold enough.
- Place in a container or bag that is suitable for freezing.
- Add a label with the recipe name and what date you froze it.
How do I reheat Fajita Bombs?
From chilled: Place in a microwavable container with a loosely fitting lid and heat for 4-7 minutes until piping hot.
From frozen: Allow to defrost overnight in the fridge and then reheat from chilled following the instructions above.

These look amazing – however I am vegetarian but not a fan of processed meat substitutes – any other suggestions for a chicken replacement please?
LisaThursday 11th January 2024
Hi Kate, I’d replace the chicken with 2 tins of drained mixed beans and some sweetcorn, but you could use any veggies you like. Hope you enjoy the recipe

Can this be crip in air fryer
HollyThursday 2nd February 2023
Hey Zoe, yes you could pop the Fajita Bombs into an air-fryer instead of the oven. We have a conversion guide HERE which you may find helpful!
KatieTuesday 18th October 2022
These look yum! Is it just the chicken mixture that freezes or can I freeze the assembled “bombs” do they reheat well?
SharonWednesday 19th October 2022
Hi Katie, you can freeze the assembled Fajita Bombs. Defrost fully before reheating until piping hot throughout. You should find these reheat fine in the microwave, and then you could pop them under the grill for a few minutes to crisp them up. Alternatively, cover with foil and reheat in the oven until piping hot throughout. Hope that helps!

Is it tinned tomatoes that go in the pan or fresh? And is it fresh tomatoes that go with the lime, onion, garlic?
HollyTuesday 30th August 2022
Hey April, We’ve used a 400g can of chopped tomatoes for this recipe. 200g in the fajita mixture and 200g in the salsa. Hope that helps!

Could you do this with mince instead of chicken?
Thank you 😊

Hey Tanisha, we haven’t tested this recipe using mince but it should work okay, just alter the calories accordingly. Hope that helps!
