If fajitas are a family favourite in your house, you NEED to try this fun twist on the midweek classic! Fajita spiced chicken and veggies get wrapped up in tortilla packages and baked in the oven until the shell is all crispy. Crack them open for an explosion of fajita flavours!

Our slimming friendly recipe uses a homemade fajita spice blend, which is SO much nicer than the pre-packaged mixes you get in the supermarket. 

Serve these for a midweek family feast and load them up with salsa and sour cream – everyone will be so excited to get stuck in! 

What diets are these Fajita Bombs suitable for?

Fajita Bombs can be enjoyed on a gluten free diet, as long as you substitute the tortilla wraps for suitable gluten free alternatives. 

If you’re cooking for people with allergies, be extra careful when checking ingredients and preparing food!

Do you need any special ingredients to make Fajita Bombs?

Nope! This is a super easy midweek dinner that you can make from ingredients that you usually have in the house. Anything that you need to pick up should be easy to find in your usual supermarket.

You can also heat the tortilla wraps in a frying pan over a medium heat - simply heat each wrap for 20-30 seconds, flipping over halfway through.

WOW. Delicious
Added a small amount of smoked bacon to use up. What an amazing flavour with the salsa and soured cream. Loads left to make another amazing meal. Served with a lovely salad.
My bombs are large, easy to make
Changed it up a bit by using piccolo mixed tomatoes as I wanted to use them up. Served with mixed salad.

Batch cook and freeze!
Loved it! Great fajita taste and quick and easy to make
I used frozen mixed peppers and added a sprinkle of parmesan on the top too. I halved the recipe & so had one for dinner, one to take to work for lunch and one for the freezer. Served with cajun chips and salad.

Loved this, as a solo I look for recipes that can be frozen easily and able to reheat for lunches as well as dinner's. This fits the bill perfectly. Kept to the instructions and it's delish!
Not so hot hot hot
Skip adding the chilli powder to the recipe if you don’t like it hot or you’re feeding to children.
Mexican perfection!
I added a tin of mixed taco beans which made the filling go further and was great for batch cooking. The recipe was absolutely delicious and is a firm favourite now

How many calories are in these Fajita Bombs?

There are 386 calories in each portion of these Fajita Bombs, which means the recipe falls into our Everyday Light category. 

This Fajita Bombs recipe is perfect if you’re following a calorie controlled diet, and it fits well with any one of the major diet plans such as Weight Watchers. 

As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Step 1

Preheat the oven to 180ºC and spray a frying pan with low calorie cooking spray and set on a medium heat.

Step 2

Add the chicken to the pan and fry for 3 minutes, then add the onion and pepper and continue to cook for 3 more minutes.

Sprinkle in the coriander, cumin, paprika, chilli powder and garlic granules and give the pan a stir to coat the chicken in the spices. Add in the tomato puree and chopped tomatoes and allow to bubble for 4 minutes.

Microwave the tortilla wraps for 30 seconds. This is to make them easier to fold.

Step 5

Lay a tortilla wrap out and sprinkle with 1 tbsp of Cheddar cheese. Spoon some of the chicken mixture on top of the cheese. Fold the bottom of the tortilla over the chicken, folding it away from yourself, then rotate and repeat the fold on the next edge. Continue until the chicken is contained within the tortilla.

Step 6

Place the fajita bomb in an oven dish with the seam facing down. Repeat with the other tortillas.

Step 7

Sprinkle the remaining cheese on the top and pop in the oven for 15 minutes until the cheese is melted and the tortilla wraps are just starting to go crispy.

In a small bowl combine the chopped tomatoes, red onion, lime juice and garlic granules.

Serve the tortilla bombs with a spoonful of the salsa and sour cream.

How do you know when Fajita Bombs are cooked?

You should cook these Fajita Bombs until the cheese is melted and the tortilla has started to go crispy. The chicken inside should be cooked all the way through, with no pinkness in the middle. 

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe. 

How long can you keep Fajita Bombs in the fridge?

Once you’ve served this dish, ideally you should eat it within 4 hours.

If you have any leftovers, make sure that you allow them to cool before popping them in a container with a lid and refrigerating. Leftover Fajita Bombs can be kept in the fridge for up to 2 days. 

Can I freeze Fajita Bombs?

You can absolutely freeze this recipe! If you do, just remember to do the following:

  • Allow it to cool and then freeze as soon as it’s cold enough.
  • Place in a container or bag that is suitable for freezing.
  • Add a label with the recipe name and what date you froze it.

How do I reheat Fajita Bombs?

From chilled: Place in a microwavable container with a loosely fitting lid and heat for 4-7 minutes until piping hot.

Ingredients

  • 650 g chicken breast, chopped into small chunks
  • 1 pepper, any colour, deseeded and finely diced
  • ½ red onion, peeled and finely diced
  • 200 g chopped tomatoes
  • 2 tbsp tomato puree
  • 2 tsp ground coriander
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp chilli powder
  • 1 tsp garlic granules
  • low calorie cooking spray
  • 6 low calorie soft tortilla wraps
  • 100 g reduced fat Cheddar cheese, finely grated

To serve

  • 200 g chopped tomatoes
  • ½ red onion, peeled and finely diced
  • ½ tsp garlic granules
  • 1 tsp lime juice
  • 6 tbsp reduced fat sour cream

    Hi Helen, the Fajita Bombs aren’t overly spicy but if you’ve like to make it milder you could use a mild chilli powder or you can leave out the chilli powder if you prefer. Hope that helps!

    Hi Tracy, I think you can make the filling and pop it in the fridge the day before but would assemble the bombs when ready to cook as he wraps may become a little soggy. Hope that helps!
