Baked in the oven or left to bubble away in the slow cooker, this one-pot Gingered Pork is a flavoursome family warmer. We’ve combined chopped tomatoes, vegetables, herbs and spices with punchy ginger to make our showstopping sauce, and left our pork pieces to cook until they’re fall-off–the-fork tender. It tastes so mouth-wateringly good, you’ll be relieved to hear that it’s freezer-friendly too.

Tinned Cherry Tomatoes
Double the recipe to save cooking another day - switch out one of the tins of chopped tomatoes for a tin of cherry tomatoes to add pops of juicy tomatoes. The texture compliments the pork very well
