Sometimes the simplest flavours are the best, and that's definitely true with our Margherita Cod. Fans of our Margherita Chicken will already know what to expect! It's so fuss-free to put together – simply combine the garlicky sauce ingredients and relax while the succulent cod loins bake to flaky perfection. For a final touch of pizza-inspired magic, we've scattered juicy tomatoes and gooey mozzarella on top!

It's worth using good-quality tinned chopped tomatoes to give this dish a good flavour. Some cheaper brands can be quite acidic and a little watery.

NEW TIP
Super easy fish dish.
Used Haddock fillets instead of cod, had no fresh basil so used a pinch of mixed Italian dry herbs. Also added a handful of the chopped cherry tomatoes to the sauce which thickened it up nicely. Another all-round quality recipe from PoN.
I used dried basil instead of fresh in the sauce.
