This wholesome, midweek warmer of baked chicken in a flavour-rich, roasted red pepper sauce, topped with gooey mozzarella and garnished with basil, looks almost as good as it tastes! Too delicious to eat once, you'll want to save extra portions of the freezer-friendly sauce for a rainy day (use a batch to rustle up the Creamy Roasted Red Pepper and Chicken Pasta from our website!).

The sauce can be made in bulk and frozen in portions ready for a quick dinner.

NEW TIP
A filling and tasty meal, perfect for extra hungry days
I would add pasta to this on extra hungry days for a really filling meal. There's plenty of sauce to go around
NEW TIP
Simply delicious 😋
I roasted 2 peppers in the airfryer for 15mins as didn't have the jar. Added a pinch of chilli flakes to the sauce. I semi blitzed it as we like some texture. Also added some parmesan on the top. Fabulous!!
