We love a quiche, It’s a classic dish, but sadly pastry and slimming don’t go well together. Well unless you want to spend all your calories and Points on a tiny piece of pastry? Personally, we would rather save them for a bottle of wine!

With that in mind, we have made this Smoked Salmon and Broccoli Quiche ‘crustless’, so you can enjoy full flavour for less calories. Removing the pastry makes our slimming friendly Smoked Salmon and Broccoli Quiche perfect for calorie counting and diets like Weight Watchers!

If you’re not a fan of smoked salmon, you could swap it out for some asparagus or use poached salmon instead. Our top tip for this recipe is to add a bit of quark to the egg mixture. You won’t taste this but we think it makes for a creamier filling.

Prevent sticking use fry light spray
Spray a little fry light olive oil on quiche dish before pouring in mixture to prevent sticking . Other than that just follow the recipe for a lovely light lunch .

I added more Quark than the recipe says as the remainder of the tub never gets used. I use almost the full tub of Quark.
So quick and easy to make and so low in calories!
If you don't have any salmon, try chicken and bacon!

Step 1

Preheat the oven to 190°C. Place the broccoli into a pan of cold water and bring to the boil. Cook the broccoli for 3-4 minutes until tender, you should be able to stab a knife into the florets easily.

Step 2

Drain well and pat dry with a kitchen roll. Allow to cool.

Step 3

Spray a frying pan with low calorie cooking spray and set on a low heat, fry the spring onions for a few minutes until softened.

Step 4

In a bowl mix the eggs and quark until smooth and season to taste with salt and pepper.

Step 5

Add the salmon, broccoli and spring onion to the flan dish and pour over the egg mixture.

Step 6

Bake for 20-25 minutes until set and golden on the top.

Ingredients

  • 8 large eggs
  • 1 medium head of broccoli, approx. 375g, cut into bite size florets
  • 100 g smoked salmon, chopped into small pieces
  • 2 spring onions, sliced
  • 80 g quark
  • salt and pepper, to taste
  • low calorie cooking spray

    Hi Kim, we haven’t tested this recipe with salmon fillets, but I would suggest using two and see if that suits you.You would need to cook the salmon fillets before putting in the quiche.Do hope this helps.

    Hi Kim, thanks for getting in touch with us, you can use a light cream cheese in this recipe. We use Quark as it has a lower fat content than most cream cheeses. Hope this helps and please let us know how you get on with the recipe.

    Hi Kelly, This is best eaten fresh but if you allow any leftovers to cool, make sure to refrigerate. You can keep leftovers of Smoked Salmon and Broccoli Quiche in the fridge for approximately 3 days.
    I wouldn’t recommend reheating the quiche because of the salmon but it’s great eaten cold.

    Egg based recipes like this may not defrost successfully as they can become watery…it’s probably best to make this fresh, and it will keep in the fridge for a few days ????

I absolutely love this recipe! I’ve always been put off crustless quiches because I don’t like cottage cheese but this works so well with the quark. I used flaked poached salmon instead of smoked & I added some asparagus and baby plum tomatoes. I have it cold with salad & baby new potatoes, absolutely delicious!
