We’ve blended sweet strawberries into a smooth frozen yoghurt base, then topped it with a drizzle of homemade strawberry purée for even more fruity deliciousness. Better still, each bowl comes in at just 96 calories, making it a lighter way to enjoy a sweet treat.
This recipe is perfect for making ahead, too. Pop it in the freezer for up to 3 months and you’ll have a delicious dessert ready whenever the craving strikes. Just remember to take it out around 30 minutes before serving so it softens up nicely and is ready to scoop.

Remove from the freezer and allow to soften for about 10-15 minutes, before scooping out in chunks and placing in a food processor or blender. Depending on the capacity of your appliance, you’ll probably need to do this in several batches.
Step 3
Blitz the frozen chunks of yoghurt until smooth and creamy, and place in a large mixing bowl. Fold in the sweetener and vanilla extract with a large metal spoon — until well combined.
Step 4
Place the frozen strawberries and strawberry squash in a medium mixing bowl, and stir. Take half of this mixture and place in your food processor or blender. Blitz until smooth.
Step 5
Using a large metal spoon, fold the blitzed strawberry mixture into the bowl of frozen yoghurt until evenly mixed. The mixture should be completely pink. Tip into the freezer-proof container and spread out evenly.
Step 6
Take the remaining strawberry and squash mixture and place in your food processor or blender. Blitz until the strawberries are reduced to medium-sized chunks.
Step 7
Spoon the chunky strawberry mixture over the frozen yoghurt mixture in the container. Use a spoon to roughly swirl through the yoghurt mixture.
Step 8
Return to the freezer for a further four hours, until frozen throughout. Remove from the freezer for about 10-15 minutes to soften a little before serving. Sprinkle with a few fresh mint leaves to decorate (optional) and serve at once.

I made this and the flavour is excellent, but I got massive ice crystals in my frozen yoghurt which gave it a weird “crunchy” texture. Do you have any idea what I might have done wrong?

Hi Sam, we used Greek yoghurt in this recipe which has a thicker, creamier consistency than Greek style yoghurt so that can cause it to be icy. Hope that helps!
