You might be thinking halloumi in a curry sounds a little strange, but don't knock it till you try it! The salty flavour and chewy texture is perfect for this dhansak-inspired fakeaway. Similar to one of our favourite takeaway curries this vegetarian recipe gets a sour tang from tamarind paste and a pop of sweetness from fresh pineapple. Just wait until you taste all those vibrant flavours in every delicious, slimming-friendly forkful.

Amazing taste!
Make sure you space the halloumi out on your baking tray or you may end up with a sheet of halloumi rather than cubes!

I let the sauce cook for a little bit longer to ensure the lentils were soft and melting. We like a warm curry so 1/2 tsp of medium chilli flakes was perfect for us. We will be fighting over the leftovers tomorrow lunchtime 😂
