Sometimes called dan dan noodles, this speedy stir-fry is inspired by a Chinese street food dish that is usually served with lashings of chilli oil. We've replaced the oil with a sprinkling of fresh sliced chillies. Szechuan peppercorns have a unique, slightly citrusy taste, adding aromatic flavour and another level of heat to this fiery recipe.

We've left the seeds in our sliced red chillies to give a fiery heat, but if you prefer less heat you can remove the seeds.
