The red split lentils used in this recipe are ones that you don’t need to soak first. This type cooks quickly so will save you time and will be more convenient to use than whole dried lentils. Season the soup after cooking, as cooking lentils with salt can toughen them.

If you don’t have fresh thyme and oregano, use 1⁄2 tsp each of dried thyme and oregano instead.
