Chilling the burger patties means they are firmer and hold their shape while cooking. If you’d like the burgers with a lot more kick, use a full red chilli in the burger mixture.

Easy peasy!
The mayo left a lovely zing but if you prefer more spice, double the chipotle paste.
I decided to cook these in my air fryer for 10 minutes. Turned out fantastic. I was afraid that the burgers would break because of the way I cooked them but they stayed fine.
I had some left over fresh tuna so used this instead!
I didn't have fresh chillis so used dried!
