Creamy Strawberry Mini Meringues
Just looking at these adorable Creamy Strawberry Mini Meringues makes us want to sit on The Hill, watching the sunset with a jug of Pimm’s! The ultimate Wimbledon-ready treat, they work well on their own or as part of a larger, slimming-friendly afternoon tea spread.
To give these crispy, chewy-in-the-middle minis the taste of luxury for a fraction of the calories, we’ve filled them with a blend of granulated sweetener and reduced-fat cream cheese.
If you forget to pick up reduced-fat cream cheese at the shops, you can sandwich your meringue pieces together with a swirl of reduced-fat aerosol cream instead (just be sure to take note of any additional calories, if you’re counting!).
Cream Tea Scones
You can’t get an afternoon tea party started without scones! While the cream and jam topped versions you can buy from cafes or shops aren’t always the most slimming friendly, our Cream Tea Scones come in at just 93 calories each – creamy, reduced-sugar jam filling included!
There’s no better excuse to crack out your fanciest crockery. Everyone around the table is sure to love them, but we can’t guarantee there won’t be some debate over whether jam or cream is spread on first – we’ll leave that up to you to decide (but it’s definitely jam!).
Scones are at their very best when they’re served freshly baked. To make sure your scones don’t end up in a crumbly mess, make sure you slice them in half with a well-sharpened, serrated knife once they’ve cooled.
Cheesecake Stuffed Strawberries
As scrumptious as a thick dollop of double cream is with strawberries, the London tennis tournament’s go-treat isn’t the most slimming friendly. For a lower-calorie alternative that ticks all the boxes, why not try our ever-popular Cheesecake Stuffed Strawberries?
Cheesecake can take hours to set, but our cheesecake-style bites are ready in 10 minutes without the need for fancy ingredients.
To give them a gorgeous crunch, add a sprinkling of crumbled light digestive biscuit on top. There’s nothing to stop you using your favourite biscuit (bourbon, custard creams or ginger nuts would all be a dream!), you’ll just want to count the calories if you’re keeping track.
Strawberry Oat Muffins
These Strawberry Oat Muffins are so simple to make, even the youngest tennis fans in the family can join the fun in the kitchen. You could always let them have a go at stirring and dividing the filling for each muffin cup – it’s really simple to do and they’ll love the chance to get stuck in.
By combining fresh strawberries with fat-free strawberry yoghurt and strawberry essence, we’ve made sure they’re bursting with berry goodness for a fraction of the calories you’d expect.
Strawberry Pancake Traybake
When you want to make lots of fruity treats in one batch, look no further than our Strawberry Pancake Traybake. Use a silicone spatula to scrape every last drop of batter from your mixing bowl and into a baking tray.
Once your strawberries and chocolate chips are folded in, relax while your oven does the hard work for you. 20 minutes later when your traybake is golden brown, add a dusting of icing sugar right before slicing.
If you’re feeling extra indulgent, try spooning berry compote onto your squares (you can never have too many berries!).
Strawberry and Feta Salad
A forkful of sunshine, it’s impossible to say no to Strawberry and Feta Salad. Since everything really is better with feta, adding this one to your slimming-friendly buffet table is a no-brainer.
We’ve tossed together juicy strawberries, peppery rocket and zingy salad dressing, and cut through it all with a tangy topping of crumbled feta cheese. What’s not to love?
You can’t have afternoon tea without a few savoury picky bits on standby. This juicy salad would take Sausage Rolls or Ploughmans Quiche to the next level.

Strawberry Shortcake Trifles
The ultimate summertime dessert, you need to try our Strawberry Shortcake Trifles. With layers of strawberry jelly, crumbly shortcake and a cream-style topping, it’s no wonder that they always impress.
To lower the calories without compromising on fruity indulgence, we’ve prepared our decadent-tasting layers from scratch with a number of lower-calorie ingredients.
The standout winner in this recipe is the shortcake. Not to be confused with shortbread biscuits, shortcake is an American-style crumbly cake similar to a scone. That means that each trifle is basically a Cream Tea you can eat with a spoon (for only 251 calories!).
You can find the full recipe in our fifth cookbook, Pinch of Nom: Enjoy, on pages 238-239.
Coronation Strawberry and Ginger Trifle
Originally dreamed up to mark the King’s coronation, our Coronation Strawberry and Ginger Trifle instantly gives any menu a celebratory feel. With layers of low-sugar jelly, homemade ginger-infused custard and sticky ginger cake, our dessert is just as decadent as His Majesty’s version, for a fraction of the calories.
You could serve it as one majestic centrepiece, or divide it into individually-decorated portions.
To match the red, white and blue bunting at your tea party shindig, have some fun sprinkling the creamy top layer with colourful hundreds and thousands.
Pimms Lolly Ice
Bring Wimbledon home with a treat based on their official tipple: Pimms Lolly Ice! Delightfully light and refreshing, you’ll never regret stashing a batch of these fruit-filled lollies in the freezer.
Since they’re for grown-ups only, make sure you store them away from where little hands can reach them.
To give the strawberry, orange and cucumber a lift, we’ve added a zingy dash of ginger ale and a sprig of fresh mint.
Making frozen treats at home is a great way to save pennies and cut calories. You’ll need a mould if you’re going to be making this recipe and other lolly-style treats.
Strawberry Mojito Jellies
With or without alcohol, our Strawberry Mojito Jellies always add a touch of fun to any party spread. We’ve added white rum to give each fruity jelly pot an adults-only twist – you can always add more, if you’d like them even stronger!
You’ll want to plan for them to set overnight, so that they’re ready for watching the big matches when you are.
To make them look as impressive as they taste, try serving each wibbly-wobbly portion in matching decorative glass bowls.
