Lolly ice or ice lolly? Whatever you call it, this is a grown up twist on a deliciously refreshing, frozen treat. The only thing better than a Pimms in the sunshine is enjoying one of these Pimms Lolly Ices out in the garden. 

With sweet fruit, fresh mint and a tang of ginger ale mixed in, these lollies are light and refreshing. At just 43 calories each, they’re ideal if you’re counting calories or following one of the popular diet plans like Weight Watchers. 

So simple to make, you’ll want to make sure you have some of these stocked in the freezer for sunny days! Just watch out for little fingers – these are definitely only for the grown ups!

Ingredients

  • 50 ml Pimms
  • 400 ml light ginger ale
  • 50 g strawberries, sliced
  • 6 cucumber slices
  • 3 slices of orange, cut into thirds
  • 4 g fresh mint, finely sliced

Instructions
