This Syn Free Crustless Quiche Lorraine is really easy to make with a few kitchen basics.
You can use whichever size dish you like, depending on how thick or thin you like your quiche – you’ll just need to adjust the cooking times if using a dish with a smaller diameter as it will take longer for the egg to cook through but will give a deeper finish to the quiche.
We also like to use one of these Deiss graters for grating cheese – it turns a small amount of cheese into a huge pile and makes a little go much further!
Just watch your fingers as it is VERY sharp!!

This Syn Free Crustless Quiche Lorraine is, as the name suggests, Syn Free if you using half of your Healthy Extra A.
If not using your Healthy Extra A, it works out at just over 3 Syns per slice – that’s a huge Syn saving on a shop bought version – and it’s full of cheese, bacon and onion!
This Syn Free Crustless Quiche Lorraine is suitable for Extra Easy SP, but you would need to serve it with a suitable accompaniment.
Can I freeze this Syn Free Crustless Quiche Lorraine?
This recipe can be frozen, but please remember to do the following;
– Freeze it as soon as it is cold enough
– Use a container or bag that is suitable for freezing.
– Defrost thoroughly before reheating or eating.
How do I make this Syn Free Crustless Quiche Lorraine ?
Preheat the oven to 160°C. Chop the bacon into thin strips and dice the onion finely.
Spray a frying pan with Frylight and, on a moderate heat, cook the bacon strips and diced onion until the bacon has coloured and the onion is soft. Set aside to cool slightly.
Place the eggs into a large bowl and whisk. Add the quark and continue to whisk until the quark is fully combined – there should be no lumps at all. Season well with salt and pepper.
Stir in half of the cheese and the bacon/onion mix. Spray a 24cm Pyrex flan dish with Frylight and pour in the egg mixture. Make sure that there is an even distribution of bacon and onion.
Top with the remaining cheese and cook for 20 minutes until golden. If using a dish with a smaller diameter (therefore resulting in a deeper quiche) then it may need an extra 5-6 minutes in the oven.
Serve hot or cold with your choice of accompaniment.
