What do I need to make this Crustless Quiche Lorraine?

This Crustless Quiche Lorraine is really easy to make with a few kitchen basics.

Firstly, you’ll need a Pyrex flan dish like this one from Amazon.

You can use whichever size dish you like, depending on how thick or thin you like your quiche – you’ll just need to adjust the cooking times if using a dish with a smaller diameter as it will take longer for the egg to cook through but will give a deeper finish to the quiche.

We also like to use one of these Deiss graters for grating cheese – it turns a small amount of cheese into a huge pile and makes a little go much further!

Just watch your fingers as it is VERY sharp!!

This recipe can be frozen, but please remember to do the following;
– Freeze it as soon as it is cold enough
– Use a container or bag that is suitable for freezing.
– Defrost thoroughly before reheating or eating.

 

How do I make this Crustless Quiche Lorraine ?

Step 1

Preheat the oven to 160°C. Chop the bacon into thin strips and dice the onion finely.

Step 2

Spray a frying pan with Low Calorie Cooking Spray and, on a moderate heat, cook the bacon strips and diced onion until the bacon has coloured and the onion is soft. Set aside to cool slightly.

Step 3

Place the eggs into a large bowl and whisk. Add the quark and continue to whisk until the quark is fully combined – there should be no lumps at all. Season well with salt and pepper.

Step 4

Stir in half of the cheese and the bacon/onion mix. Spray a 24cm Pyrex flan dish with Low Calorie Cooking Spray and pour in the egg mixture. Make sure that there is an even distribution of bacon and onion.

Step 5

Top with the remaining cheese and cook for 20 minutes until golden. If using a dish with a smaller diameter (therefore resulting in a deeper quiche) then it may need an extra 5-6 minutes in the oven.

Serve hot or cold with your choice of accompaniment.

This recipe can be frozen, but please remember to do the following;

- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.
- Defrost thoroughly before reheating (you can use the defrost setting on your microwave.)
- Make sure it is piping hot all the way through before serving.

If making this recipe Gluten Free please make sure to check the ingredients that you’re using

Especially things such as; 

- Stock cubes
- Soy sauce - substitute with Tamari.
- Worcestershire sauce - substitute with Henderson’s Relish.
- Etc.

    1. That’s right, Annette! The full recipe uses 4 HEA servings of cheese, so a 1/4 of the quiche would be 1 HEA. 🙂

Just made this with my daughter…actually think it may have been the best quiche I have EVER eaten ,,,added a little Schwartz all season spicy chillies & onion – it is sooooo gorgeous – thank you for such a fab recipe … I love using quark and didn’t have any cottage cheese which my usual recipe uses. Definitely need to include this in a recipe book if you do one 🙂

      You can’t taste the quark, but if you really don’t want to use it, you could try some fat free fromage frais, or blitz some cottage cheese. Hope that helps. 🙂

      If you scroll down to the recipe card, you’ll find a freezer symbol and freezing instructions. We put this symbol on every recipe card that’s suitable for freezing. 🙂

      If you’re using the cheese as part of your HEA allowance, then it’s still Syn free. If you are counting the Syns, and youve halved the recipe, you’re using 13 Syns worth of reduced fat cheese in total. You should divide by 4 to find the total per serving. This works out at 3.25, but to protect your losses, you should round up to 3.5 Syns per slice.

  3. This was absolutely delicious! If I prep all the ingredients (cooked onion and bacon, whisked egg and grated cheese) do you tho k it would be ok in the fridge for a day or two so I could just pour into a dish, add the extra cheese and bake? I have a baby so I try to prep as much of the next day’s meals as I can after she’s gone to bed.

      It would be better to cook the quiche, then store in a sealed container in the fridge for up to 48 hrs. 🙂

      So glad you enjoyed it. You can add pretty much anything you like. You might find that mushrooms and peppers make it a little watery though, as they both have quite a high water content. Thanks for getting in touch!

    Love love love this recipe, quick, easy and my “go to” for snacking..
    Could I just check the HEA cheese..recipe says 160g reduced fat cheddar but in SW book 40g reduced fat cheddar equals 1 HEA? Xx

      You are correct, 40g is the amount of reduced fat cheddar for a Healthy Extra. In this recipe we use 160g. As this makes 8 portions that means there is 20 g (1/2 HEA) per portion.
