This Sausage Hash is a slimming-friendly dish that makes the most of leftover sausages (or you can buy them specially!) and everyday veg. It’s hearty, filling, and works as a tasty breakfast, quick lunch, or even a breakfast-for-dinner evening meal that won’t blow your calories.

How many calories are in this Sausage Hash?

Step 1
Dice the potato (no need to peel). Place it in a pan of cold salted water, and bring to the boil. Cook for 8 minutes — until the potato is just soft.

Preheat the oven to 200°C.
Step 3
Spray a large frying pan with low-calorie cooking spray, and set on a medium heat. Add the onion and peppers and fry for 5 minutes. Add the softened potato and sprinkle over the season all, stirring to coat.
Step 4
Add the courgettes and cooked sausage, and continue to cook for 5 minutes — until browned.
Step 5
Divide the mixture equally between two ovenproof dishes, and make a shallow well in each one.
Step 6
Crack an egg into each well and cook in the oven for about 12 minutes, until the egg is set. 12 minutes will give you a runny egg, so if you prefer a harder yolk, leave it in for a couple of extra minutes.
What could I serve alongside this Sausage Hash?
How do you know when this Sausage Hash is cooked?
You’ll know this is cooked when the veg is tender and lightly golden, and the sausage is piping hot throughout after frying, with everything nicely coated in seasoning. In the oven, keep an eye on the eggs, they’re done when the whites are set and no longer see-through, but the yolk is still soft and a little wobbly if you like it runny (this will take around 12 minutes). If you prefer a firmer yolk, just leave them in for a couple more minutes until they’re cooked to your liking.
Standard advice here in the UK is to cook meat until it has reached 75°C and stayed at that temperature for 2 minutes. This is to keep you and whoever it is you’re cooking for safe.
How long can you keep Sausage Hash in the fridge?
Once you’ve served up your Sausage Hash, ideally you should eat it straightaway. We wouldn’t recommend refrigerating it.
If you’d like to make a start on this recipe the night before, simply prepare and fry off all the veg and then store it in the fridge until the morning.

It might not freeze to well, but you could cook off the veg and keep it in the fridge for a few days, then just portion it into an oven proof dish, crack in an egg and bake whenever you want
