For the full list of ingredients and comprehensive instructions, please see the recipe card below. Before you scroll, there’s important stuff in the blurb!

This Sausage Hash is a slimming-friendly dish that makes the most of leftover sausages (or you can buy them specially!) and everyday veg. It’s hearty, filling, and works as a tasty breakfast, quick lunch, or even a breakfast-for-dinner evening meal that won’t blow your calories.

It’s also brilliant for meal prep. You can get all the veg cooked the night before, then simply reheat it, add your sausages and finish it off in the oven the next day. Pop an egg on top and you’ve got a delicious, fuss-free meal that packs in loads of nutrients without compromising on flavour.

How many calories are in this Sausage Hash?

There are 522 calories in one serving of this Sausage Hash, which means it falls into our Special Occasion category. These are all dishes that come in at over 500 calories but you can rest assured that they’re always much lower in calories than the traditional versions of these dishes. We recommend saving these recipes to use on — you guessed it — special occasions like dinner parties, celebration meals, or even just as a treat. If you’re calorie counting, they still slot in with diet plans like Weight Watchers.

As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Obviously, if your goal is to lose weight, then you might want to adjust these slightly. You can read more about these recommendations on the NHS website.

How do you know when this Sausage Hash is cooked?

You’ll know this is cooked when the veg is tender and lightly golden, and the sausage is piping hot throughout after frying, with everything nicely coated in seasoning. In the oven, keep an eye on the eggs, they’re done when the whites are set and no longer see-through, but the yolk is still soft and a little wobbly if you like it runny (this will take around 12 minutes). If you prefer a firmer yolk, just leave them in for a couple more minutes until they’re cooked to your liking.

Standard advice here in the UK is to cook meat until it has reached 75°C and stayed at that temperature for 2 minutes. This is to keep you and whoever it is you’re cooking for safe.

How long can you keep Sausage Hash in the fridge?

Once you’ve served up your Sausage Hash, ideally you should eat it straightaway. We wouldn’t recommend refrigerating it.

If you’d like to make a start on this recipe the night before, simply prepare and fry off all the veg and then store it in the fridge until the morning.

Can I freeze this Sausage Hash?

No, we do not recommend freezing this recipe.

How do I reheat this Sausage Hash?

If you’re preparing this recipe the night before, then to reheat in the morning simply combine the chilled veg with the sausage, then pop everything in the oven to reheat. Make sure everything is heated through before adding your egg.

Hi Charlie, we like using Heck sausages but there are many other brands available too that would be suitable.

Could you reheat this in a microwave after cooking everything? As I wouldn’t have time to eat it in morning it would have to be once I get to work.

    Hi Aimie,

Yes, I’m sure it would reheat well – you might want to leave the egg off as it probably wouldn’t be as nice as a freshly cooked egg ????

    Hi Jacquetta
It might not freeze to well, but you could cook off the veg and keep it in the fridge for a few days, then just portion it into an oven proof dish, crack in an egg and bake whenever you want
