This quiche actually has waaay more flavour than a shop bought version and it’s so quick and easy to make!
Our Crustless Quiche Lorraine makes a great light meal when served on it’s own or it’s also fantastic when served with your choice of carbs for a more substantial meal. A classic Quiche Lorraine features onion and bacon, but you could really add any of your favourite vegetables. Why not try mushrooms, peppers or spinach?
Serve this dish hot or cold with your choice of accompaniment or you could even pop it into a lunch box for a quick, picnic lunch!

You’ll need a Pyrex flan dish like this one for a lovely round quiche.
You can whisk the mixture with a fork, or a proper whisk to speed things up a little. They’re available in supermarkets or online.
How many calories are in this Crustless Quiche Lorraine?
There are 336 calories in each portion of our slimming friendly Crustless Quiche Lorraine which means it falls into our Everyday Light recipe category.
This quiche is perfect if you’re following a calorie controlled diet, and fits well with any one of the major diet plans such as Weight Watchers.
As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Obviously, if your goal is to lose weight then you might want to adjust these slightly! You can read more about these recommendations on the NHS website.
Step 1
Preheat the oven to 160°C. Chop the bacon into thin strips and dice the onion finely.
Step 2
Spray a frying pan with low calorie cooking spray and, on a moderate heat, cook the bacon strips and diced onion until the bacon has coloured and the onion is soft. Set aside to cool slightly.
Step 3
Place the eggs into a large bowl and whisk. Add the quark and continue to whisk until the quark is fully combined – there should be no lumps at all. Season well with salt and pepper.
Step 4
Stir in half of the cheese and the bacon/onion mix. Spray a 24cm flan dish with low calorie cooking spray and pour in the egg mixture. Make sure that there is an even distribution of bacon and onion.
Step 5
Top with the remaining cheese and cook for 20 minutes until golden. If using a dish with a smaller diameter (therefore resulting in a deeper quiche) then it may need an extra 5-6 minutes in the oven.
Step 6
Serve hot or cold with your choice of accompaniment.
What should you should serve with this Crustless Quiche Lorraine?
You can serve this dish hot or cold and it really works well with loads of different accompaniments. You could even pop into into lunch boxes for a quick picnic lunch!
Whatever accompaniment you choose, don’t forget to account for the extra calories and/or other nutritional values.
How do you know when this Crustless Quiche Lorraine is cooked?
You should cook this quiche until the top is turning golden, and the egg has just set in the centre – it may have a slight wobble.
This should take approx 20 minutes in the oven. Times will vary if you’re using a deeper pie dish for example.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
How long can you keep Crustless Quiche Lorraine in the fridge?
Once you’ve cooked it, ideally you should eat it within 4 hours.
If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Crustless Quiche Lorraine in the fridge for approximately 3 days or so.
Can I freeze Crustless Quiche Lorraine?
Yes you can! This recipe can be frozen, but please remember to do the following;
- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.
Don’t forget to add a label with what it is, and on what date you put it in the freezer!
How do I reheat Crustless Quiche Lorraine?
From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.
From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes, let it stand for 2 minutes and microwave for a further 3 minutes.

Hey Mo, if altering the servings the quiche would be thinner and as a result would cook quicker so it would probably be best to reduce the size of the dish. Hope that helps!

I love this quiche, it cooks really well every time and is delicious. Having joined WW and checking the recipe by adding it to the app the points are much higher than listed. Using reduced fat cheddar 30% the points on purple come out as 5 per portion. Using 50% fat cheddar the points comes out as 4 per portion. Please can you update. Thank you

Hi Mary, I’m not sure cottage cheese would work in this Crustless Quiche Lorraine as when the quark is mixed with the egg you want it free of lumps and smooth. I would suggest substituting the quark for low-fat cream cheese or ricotta and alter the calories accordingly using our guide HERE hope that helps!

I absolutely adore this recipe but cannot for the life of me work out why my quiche takes over an hour to cook properly ? I use a 7inch tin but even after 45 minutes it all liquids still ? still an amazingly delicious meal and well worth the wait ?

You can cook this in any oven proof container or tin, but our timings are based on a 24cm round tin. You may need to adjust the timings if you use a different size. Don’t use a loose bottomed tin as the egg will leak out. Hope this helps

Hi, I was just wondering if vegetarian bacon would work as well? I know it isnt cooked for long, so would it be better to defrost it and let it cook in the oven?

Hi Julie, we haven’t tried using vegetarian bacon but I’m sure it would work just fine. I would suggest in step 2 cooking the onions until they are just soft then add in the bacon and fry until just coloured then follow the rest of the steps the same. Hope that helps and let us know how you get on.
