This quiche actually has waaay more flavour than a shop bought version and it’s so quick and easy to make!
Our Crustless Quiche Lorraine makes a great light meal when served on it’s own or it’s also fantastic when served with your choice of carbs for a more substantial meal. A classic Quiche Lorraine features onion and bacon, but you could really add any of your favourite vegetables. Why not try mushrooms, peppers or spinach?
Serve this dish hot or cold with your choice of accompaniment or you could even pop it into a lunch box for a quick, picnic lunch!

You’ll need a Pyrex flan dish like this one for a lovely round quiche.
You can whisk the mixture with a fork, or a proper whisk to speed things up a little. They’re available in supermarkets or online.
How many calories are in this Crustless Quiche Lorraine?
There are 336 calories in each portion of our slimming friendly Crustless Quiche Lorraine which means it falls into our Everyday Light recipe category.
This quiche is perfect if you’re following a calorie controlled diet, and fits well with any one of the major diet plans such as Weight Watchers.
As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Obviously, if your goal is to lose weight then you might want to adjust these slightly! You can read more about these recommendations on the NHS website.
Step 1
Preheat the oven to 160°C. Chop the bacon into thin strips and dice the onion finely.
Step 2
Spray a frying pan with low calorie cooking spray and, on a moderate heat, cook the bacon strips and diced onion until the bacon has coloured and the onion is soft. Set aside to cool slightly.
Step 3
Place the eggs into a large bowl and whisk. Add the quark and continue to whisk until the quark is fully combined – there should be no lumps at all. Season well with salt and pepper.
Step 4
Stir in half of the cheese and the bacon/onion mix. Spray a 24cm flan dish with low calorie cooking spray and pour in the egg mixture. Make sure that there is an even distribution of bacon and onion.
Step 5
Top with the remaining cheese and cook for 20 minutes until golden. If using a dish with a smaller diameter (therefore resulting in a deeper quiche) then it may need an extra 5-6 minutes in the oven.
Step 6
Serve hot or cold with your choice of accompaniment.
What should you should serve with this Crustless Quiche Lorraine?
You can serve this dish hot or cold and it really works well with loads of different accompaniments. You could even pop into into lunch boxes for a quick picnic lunch!
Whatever accompaniment you choose, don’t forget to account for the extra calories and/or other nutritional values.
How do you know when this Crustless Quiche Lorraine is cooked?
You should cook this quiche until the top is turning golden, and the egg has just set in the centre – it may have a slight wobble.
This should take approx 20 minutes in the oven. Times will vary if you’re using a deeper pie dish for example.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
How long can you keep Crustless Quiche Lorraine in the fridge?
Once you’ve cooked it, ideally you should eat it within 4 hours.
If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Crustless Quiche Lorraine in the fridge for approximately 3 days or so.

From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.
From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes, let it stand for 2 minutes and microwave for a further 3 minutes.

Hey Nic, you could swap the quark for cottage cheese, just whizz the cottage cheese up in a food processor until smooth before adding to the quiche, hope that helps!

I always use cottage cheese and I don’t tend to whisk, always comes out tasty, I use whole pot with 2 eggs, 160g cheese salt n pepper

Yes defo, I had to use mine but I used little silicon cup cakes and they turned out OK 25 minutes in my air fryer.
