We’ve used reduced-fat Cheddar to keep the calories low without compromising on the delicious cheesy flavour. As this soup is also packed full of delicious veg, it’ll help to keep you feeling fuller for longer!

Hints & Tips

Below we added some of our communities most common hints and tips. We hope you find them useful.

You can also garnish each serving of soup with 5g grated reduced-fat Cheddar for an additional 16g per serving.

Slightly longer time
I found I had to cook the broccoli fir around 6-7 minutes longer than stated
Stalks for flavour.
Once you have removed the florets, trim or peel the stalks and then finely slice them and add them in with the potatoes. Adds more broccoli flavour and uses something that would normally be thrown away. Delicious.
And ideal batch cook, I had a portion for dinner and then a portion in the fridge for lunch the next day and some tucked away in the freezer for when an emergency soup hit is needed!
Very quick and easy to make.
You can leave the vegetables chunky instead of blending.
I've made this numerous times now and always goes down well
Freezes really well
This soup is delicious & very filling. We will make it again
You could use pre-chopped onions & garlic, if you wanted to speed up prep time. If time is short, you could also buy pre-chopped or frozen vegetables. I much prefer the taste of fresh vegetables & love cooking and very rarely buy the prepared veg etc
Delicious & very filling! It is very easy to make as you make it in one pot and takes less than an hour to prepare & cook. It is a fab batch cook as I have lunch for a few days & we will definitely make this soup again! Fab recipe for all to enjoy!!!

I use blue cheese not cheddar but it’s so tasty either way

Hi can I use a pre cut leeks? And how much in g if possible?
