The warming hint of cinnamon means that this dish would also be the perfect addition to your Christmas dinner. You can even make it ahead of time and store it covered in the fridge for 2–3 days – perfect if you want to get on top of your prep!

Delicious hot or cold, makes loads!
I added some ground nutmeg and ground cloves for extra spice. At the end I wanted a little extra sweetness so put in a dash of agave syrup. I made it in my pressure cooker (I needed to add 100mls of veg stock.) It cooked in just 6 minutes.
